SPRING ROLLS


Fresh Spring Rolls With Dipping SauceSpring rolls are fresh and fun way to get more veggies into your day.


INGREDIENTS:
(for spring rolls)



  • rice paper
  • prawns
  • red pepper
  • cucumber
  • lettuce leaves
  • carrot
  • green onion
  • salt&pepper
  • lemon juice


(for dipping sauce)

  • ginger
  • red onion
  • soy sauce
  • rice vinegar
  • olive oil
  • piri piri sauce (or any other hot sauce)
  • lemon juice
  • salt&pepper

Simmer prawns for approximately 3 minutes or until they turn pink. Remove from heat and peel. Rinse under running water.



 Add lemon juice.



Add salt and pepper.




Slice all the ingredients into thin sticks.


Dip the Rice Paper in warm water. Rice paper is delicate and only needs a quick dip in warm water to soften. Do not “soak” the rice paper for too long because it will break down too quickly, making the rolling more difficult to roll.


Lay down slightly firm rice paper on flat surface. Put the ingredients in the middle of the rice paper.

Do not over-stuff your roll.



 Fold the rice paper as shown on the pictures below.







Let's make a dipping sauce!!!

Finely Mince red onion and ginger.



Add soy sauce.



Add rice vinegar.



Add hot sauce. (Please be careful with your hot sauce!)



Add olive oil.



Add peanut butter.



Add lemon juice.



Add salt and pepper.



Mix and serve with fresh spring rolls.
