BAKED GRAPEFRUIT

BAKED GRAPEFRUIT IS A GREAT WAY TO START YOUR DAY!!! IT'S GONNA WAKE YOU UP, BOOST YOUR IMMUNE SYSTEM AND METABOLISM!!!



INGREDIENTS:

  • grapefruit
  • honey
  • cinnamon


Preheat your oven to 190°C/375°F.




 Cut your grapefruit in half. Drizzle with honey and sprinkle with cinnamon.


Bake for 15 min. Take out of the oven and enjoy!


SERVE AND ENJOY!!!

BROCCOLI AND CAULIFLOWER SOUP




WARMING VEGAN SOUP, WITH CAULIFLOWER AND BROCCOLI AS MAIN INGREDIENTS. GREAT WAY TO EAT MORE VEGETABLES. IT'S CREAMY AND DELICIOUS!!!





INGREDIENTS;


  • broccoli 400g
  • cauliflower 500g
  • potato 2 about 300-400g
  • carrot 1
  • salt&pepper
  • chilli flakes
  • olive oil
  • garlic 4 cloves
  • parsley
  • dill



Preheat your oven to 175°C/347°F. Peel, cut into small pieces and boil your potatoes.



Cut your vegetables into small pieces, add olive oil, chilli flakes, salt and pepper.



Mix well.



Pour vegetables on a baking tray.


Bake for 10 min, then add garlic and onion and bake for another 20 min.



 Pour everything into your blender (don't forget about your potatoes).



Add about 2 cups of boiling water (depends on how thick you want your soup). Blend until smooth.



Garnish with chopped parsley, dill and chilli flakes for extra spiciness.


SERVE AND ENJOY!!!

RAW ALMOND BUTTER

Homemade almond butter is a great alternative to peanut butter (its even better for you!). It takes about 20 minutes and only  3 ingredients!!!


BENEFITS:
  • regulates blood sugar
  • lowers a risk of a heart attack
  • reduce bad cholesterol
  • has monounsaturated fats 
  • offers antioxidant action from Vitamin E
  • helps lower the risk of developing gallstones
  • source of the minerals manganese and copper as well as Vitamin B2, or riboflavin, all of which are necessary for energy production.


INGREDIENTS:
  • almonds
  • coconut oil
  • pinch of salt
(You can add cinnamon, honey or vanilla for flavoring)


Add almonds to blender or food processor and blend (be patient).


If your almonds look like this...blend more.


More...don't forget to add salt and coconut oil (or any flavouring you like). You may need to scrape down the sides and keep blending until the almond butter reaches your desired degree of smoothness.


I like it pretty smooth, so it looks something like this.



Serve with anything you like.

I like it with rice cakes and toasted sesame seeds on top, sometimes I add it to smoothies, oatmeal or fruits.

MARBLED HIBISCUS MERINGUE

There are several types of meringue, here we have French meringue with hibiscus.

Hibiscus gives a bitter taste that balances meringue sweetness. It also gives a great color.


INGREDIENTS:


  • sugar 250g
  • 3 egg whites
  • dry hibiscus flowers 10g
  • water 10ml
  • pinch of salt




Preheat the oven to 90°C/200°F. Line a baking sheet with parchment paper.

Blend hibiscus flowers in a food processor or blender.



Mix hibiscus powder with water.



Beat the egg whites on low-medium speed until foamy. Add a pinch of salt and continue to beat the whites until they hold soft peaks. Add the sugar, a little at a time, and continue to beat, on medium-high speed, until the meringue holds very stiff peaks (if you want your meringues to hold it's shape).I wanted mine to be like marbled stones, so they were beaten until soft peaks form.


Add hibiscus paste to your egg whites mixture. Don't over mix (if you want that marble effect)



Spoon up the mixture to a baking tray, lined with a parchment paper.Bake for 2,5 hours.



Remove from the oven and let them cool down, they should peel easily away from the parchment.Serve with tea or coffee!

AVOCADO BANANA SPINACH SMOOTHIE

SMOOTHIE!!! Probably the best way to get everything you need in the morning. Smoothie is a healthy way eat fast! 


INGREDIENTS:
  • banana
  • avocado
  • spinach
  • yogurt
  • oats



Peel, slice and freeze your bananas.



Put everything in a blender (don't forget about the bananas). Blend until smooth.


Pour into a glass and enjoy! (Flax seeds and sesame seeds are optional).



 Enjoy good food!!!

FLOURLESS CHOCOLATE CAKE

SPECIALLY FOR CHOCOLATE LOVERS!!!Great for entertaining, deceptively easy to make. Perfect for people who can't have gluten.



INGREDIENTS:

  • 6 eggs
  • dark chocolate 220g
  • sugar 100g
  • butter 85g
  • confectioners' sugar, for dusting

Preheat the oven to 140°C/275°F. Butter the bottom and sides of a 
9-inch springform pan. Set aside. 

Separate an egg whites from the yolks. Beat the egg whites and sugar with a standing or handheld mixer until glossy stiff peaks form.


Melt the chocolate and a butter in a double-boiler.


Stir occasionally until melted.



Let cool slightly. Whisk in egg yolks.


Whisk 1/4 of the egg whites into the chocolate mixture.


 Then gently fold in remaining egg whites.



Pour a batter into the prepared pan, and smooth the top with a rubber spatula. Bake for 45 to 50 minutes. Cool completely, remove sides of pan. Dust with confectioners' sugar. Serve with ice cream or tea.

HOMEMADE GRANOLA

Do you like your food quick, easy and healthy?! So, this one is definitely for you!!!Homemade granola makes a great snack or breakfast with milk, yogurt or smoothie. This recipe is so simple that you will be surprised you haven’t made it before.

INGREDIENTS:

  • oats
  • nuts (any nuts you like)
  • pumpkin seeds (or other seeds you like)
  • raisins
  • goji berries
  • cinnamon
  • honey
You can experiment with ingredients, add dried fruits if you like or switch a honey to maple syrup...

Preheat your oven to 160°C/320°F.



Chop nuts into smaller pieces.


Combine dry ingredients in a bowl.




Add honey (if your honey isn't runny, add a splash of water and heat in a microwave or in a bain-marie). Stir until dry ingredients are well-coated.


Spread your mixture onto a baking sheet lined with a parchment paper. Bake for 30-35 min,  stir every 10 minutes to make sure it bakes evenly.



Let it cool down and store it in a glass or plastic jars. (keeps for at least two months)
