PUMPKIN SOUP

COMFORT FOOD IS WHAT COLD DAYS ARE ALL ABOUT. WE DECIDED TO COOK A PUMPKIN SOUP AS HALLOWEEN IS PRETTY CLOSE!



INGREDIENTS:
  • pumpkin 1/2
  • garlic 3 cloves
  • 1 small onion
  • butter 25g
  • sour cream 100g
  • rosemary 
  • salt&pepper
  • olive oil 45g
  • Parmesan 100g

CRUNCHY CHICKPEAS

IT'S TASTY AND HEALTHY SNACK



INGREDIENTS:
  • chickpeas
  • olive oil
  • salt&pepper
  • herbs and spices to taste


Mix herbs, spices, salt and pepper with olive oil. Soak chickpeas over night.




Boil chickpeas for about an hour (until soft). Preheat the oven to 175C.



Drain your chickpeas.



Add olive oil to chickpeas.



And mix well.



Pour chickpeas on baking tray



Bake for about an hour or until crunchy.



Let it cool. Now you have a healthy alternative to chips or other snack while watching your favorite movie or TV.

BANANA PANCAKES

NO FLOUR PANCAKES



INGREDIENTS:

  • 2 eggs
  • 1 banana
  • maple syrup
  • berries
  • cinnamon to taste





Put banana, eggs and cinnamon in a blender.


 Process until it's smooth.



Preheat your pan. Use any oil you like. Pour your pancake mixture into a pan.
Remember the smaller, the more manageable the pancakes are. You might need to practice to make banana pancakes like boss.


Fry for about a minute on each side.


Serve with maple syrup and any berries you like.

BROWN PASTA WITH MUSHROOMS

HEALTHIER VERSION OF YOUR REGULAR MEAL


Whole-grain pasta is significantly more nutritious than refined pasta.




INGREDIENTS:
  • whole-grain pasta 300g
  • mushrooms 400g
  • garlic 2 cloves
  • butter 40g
  • sour cream 100g
  • olive oil 2 tbsp
  • dried herbs
  • salt&pepper
  • Parmesan cheese (optional)


COOKING NOTE:

PASTA
 Cooking time varies depending on the kind of pasta 
(usually it is listed on the pasta packaging)
MUSHROOMS
total cooking time is about 10 minutes

CAPRESE SALAD

Simple and fresh
It was made to resemble the colors of the Italian flag: red, white, and green.


INGREDIENTS:

  • fresh mozzarella 200g
  • tomatoes 175g
  • basil 
  • olive oil 1tbsp
  • balsamic vinegar 1tbsp
  • salt&pepper 
  • dried herbs 


RECIPE


Cut tomatoes into bite size pieces.


Add fresh mozzarella, salt, pepper and dried herbs.



Pour tablespoon of balsamic vinegar.



Add clean basil leaves. 



Pour tablespoon of olive oil.
