SCANDINAVIAN CRISPBREAD

More than just a snack, crispbreads are the perfect base for cream cheese, smoked fish and pâté. And they never taste better than when you make them yourself!


INGREDIENTS:
  • oats 150g
  • flour 100g
  • poppy seeds 40g
  • flax seeds 30g
  • sesame seeds 30g
  • water 250ml 
  • salt to taste
  • dried herbs to taste

RECIPE:

Preheat the oven to 180C.
Pulse the oats in food processor until they are ground into a powder-like consistency.


Combine dry ingredients.


 Add water.



Mix until just combined.


Roll out the dough (about 0.3cm).


Cut out circles and place on baking sheet lined with parchment paper.


Bake for 10-15 min. until crispy.
Serve with salad or soup!

QUESADILLAS

Quesadillas are really quick and easy to make. Truly there are quite possibly a million variations on the quesadilla. Have fun with your ingredients. Here we have a cheesy one! 



INGREDIENTS:


  • multigrain tortilla wraps
  • red bell pepper
  • mozzarella cheese
  • chopped scallions


Preheat grill or pan to a medium heat.
Place all ingredients on one half of the tortilla.


Fold the tortilla in half.


Put on a pan or grill.


Heat about 2-3 min., than flip over and cook until the cheese is melted.


Take of the heat and cut into pieces.


Perfect for family meals and fancy enough for guests. Delicious!

CHOCOLATE PEANUT BUTTER BANANA BITES

Looking for a healthy and quick snack? Try making some frozen bananas with peanut butter!



INGREDIENTS:

  • bananas
  • dark chocolate (or any chocolate you like)
  • peanut butter 
  • chopped nuts (we used almonds and hazelnuts)



Slice bananas.


Spread peanut butter between slices.


Put this in the freezer for an hour.



Melt the chocolate.


Dip banana pieces in chocolate. 


Sprinkle with chopped nuts and freeze for at least 3 hours.


Now, you know how to make healthy snack with no cooking skills.

RABBIT IN TOMATO SAUCE

This flavorsome rabbit recipe is great for a dinner party or family meal.


INGREDIENTS:

  • rabbit (cut into pieces)
  • garlic cloves
  • tomatoes
  • carrots
  • celery
  • olive oil
  • onion
  • salt
  • rosemary
  • bay leafs
  • pink pepper
  • can tomatoes (in puree)


Place tomatoes into boiling water.



Until the skin splits, put into cold water.



Mince onion, garlic and celery, while the tomatoes are cooling.


Cut carrots into small pieces.


The skin will easily slip off each tomato.


Chop up tomatoes into small pieces.



Pour olive oil into heated pan, then add minced onion, garlic and celery.


Add carrots when onion, garlic and celery are softened.



Saute for 5-7 minutes.



Put rabbit pieces into pan and pour over tomato pure. Add salt, pink pepper, rosemary and bay leaves.
Stir everything together and cover. Simmer for an hour (reduce heat to low).




Serve with couscous or any side dish you like.
